Thai Red Curry Udon soup

In a large pot -

1 Red onion quartered

1tbsp garlic

1 tbsp ginger

1/2 Brocoli floret

8 Chestnut mushrooms halved

Fry in sesame oil for 10mins

Add

2 tbsps of Thai red curry paste

1tbsp of Bols curry powder

Stir for 10mins

Add

1/2 tin of coconut cream

2 tbsps of Osem chicken stock (not chicken)

2ltrs of water

2 packets of Udon noodles

A packet of snap peas

2 large red chilies

A large handful of chopped corriander

5 pieces of Thai basil

3 spring onions chopped into 2 inch pieces

Cook for a further 10mins on a high heatand leave to rest for a further 10mins



In a frying pan -


1 aubergine sliced

1 tsp of red Thai curry paste

1 tsp of chat masala

Fry seperately in olive oil for 10mins on a high heat


place in a bowl with aubergine slices and chopped coriander on top
