golden cauliflower Ayurvedic soup:
Ingredients:
- 1 head of cauliflower, chopped into florets
- 1 onion, diced
- 2 cloves of garlic, minced
- 1-inch piece of ginger, grated
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 4 cups vegetable broth
- 1 cup coconut milk
- Salt and pepper to taste
- Fresh cilantro or parsley for garnish (optional)
- Olive oil for cooking
Instructions:
1. Heat a drizzle of olive oil in a large pot over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
2. Add the minced garlic and grated ginger to the pot, and cook for another 2 minutes, until fragrant.
3. Stir in the ground turmeric and ground cumin, and cook for an additional minute to toast the spices.
4. Add the chopped cauliflower florets to the pot, along with the vegetable broth. Bring to a boil, then reduce the heat and simmer for 15-20 minutes, until the cauliflower is tender.
5. Use an immersion blender or transfer the soup to a blender to puree until smooth.
6. Return the soup to the pot (if necessary), and stir in the coconut milk. Heat gently until warmed through.
7. Season the soup with salt and pepper to taste.
8. Serve hot, garnished with fresh cilantro or parsley if desired.
